Polenta!

I tried polenta for the first time last night. Of course it was the store-bought, precooked polenta (garlic and basil), not the authentic, slow-cooked for 5 years by an arthritic Italian grandma kind of polenta. But it was good nonetheless.

I had to test it on Mrs. Spart to see if she liked it before I tried cooking with it, or serving it as a side dish.

Since it's essentially just spongy Italian cornbread, I heated it up and served it with sliced cheddar cheese as an evening snack. We liked it, and so did Pooka Cat. Her brother Neko turned his nose up at it. Such a well-bred cat would never touch such peasant fare, even if it is haute cuisine in America. He knows better.

So now I'm thinking about ways to cook with it.

One recipe I saw suggested using it as a pasta alternative in lasagna. That could be interesting.

I was thinking of what it would taste like crumbled up and mixed with crumbled sweet Italian sausage, onion, peppers and olives; fried in olive oil, then coated with some sort of sauce?

Maybe served alongside some steamed al dente green beans or maybe with a spinach salad?

Any suggestions?
